Ingredients

Pie Crust Base

  • 1 package flaky pie crusts 2-count; 14.1 oz Pillsbury recommended

Part 1: Pumpkin Filling

  • 1 15-oz can 100% pumpkin puree
  • 1/4 cup brown sugar
  • 1 Tbsp sweetened condensed milk
  • 1 tsp pumpkin pie spice
  • 1 tsp flour
  • 1 large egg
  • 1 pinch salt

Part 2: Egg Wash & Rustic Topping

  • 1 large egg
  • 3/4 tsp pumpkin pie spice
  • 3/4 tsp turbinado sugar Sugar in the Raw
  • 1 pinch salt

Part 3: Optional Dipping Sauce

  • 1/3 to 1/2 cup sweetened condensed milk
  • 3/4 tsp pumpkin pie spice

Instructions

  • Remove pie crusts from the fridge to warm slightly while you prep the filling.
  • Preheat oven to 350°F. In a bowl, mix all 'Part 1: Filling' ingredients until smooth and combined.
  • Roll out one crust on a clean surface. Use a 3-5/8" to 4" circular cookie cutter to cut out rounds. Re-roll and cut dough until you have about 16 circles.
  • Add a spoonful of filling to the center of each dough circle. Dip a finger in water and moisten the edge of the crust.
  • Fold the dough over the filling to form a half moon. Pinch edges, then crimp with a fork. Place on parchment-lined or greased pan.
  • In a small bowl, beat the egg for the wash. In a separate bowl, mix pumpkin pie spice, turbinado sugar, and a pinch of salt for the topping.
  • Brush each pasty with egg wash. Use a sharp knife to cut three small vents on top. Sprinkle evenly with topping blend.
  • Bake at 350°F for 25–30 minutes until golden brown at the edges. Cool slightly before serving.
  • For dipping sauce: In a small bowl, mix sweetened condensed milk with pumpkin pie spice. Let sit for at least 5 minutes to develop flavor. Serve alongside warm pasties.

Notes

The filling and dipping sauce can be made in advance for easy assembly. Perfect for a Harry Potter movie night, fall celebration, or wizard-themed party. Serve warm for best flavor and texture. Leftovers can be stored in an airtight container and reheated in a toaster oven.
