Turkey & Stuffing Waffle Sandwiches (Epcot-Inspired)

Ingredients

Stuffing Waffle Batter

  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup canola or avocado oil
  • 1 pinch salt optional
  • 3 cups prepared stuffing We recommend Stove Top Savory Herbs, prepared as directed.

Sandwich Fillings

  • 2 servings sliced turkey warm; may substitute chicken
  • 2 servings cranberry sauce We recommend the Bourbon Cranberry Sauce from Bon Appetit.
  • 2 servings gravy prepared from turkey drippings or a packaged mix

Instructions

  • In a large bowl, whisk together the egg, milk, oil, and salt.
  • Add prepared stuffing one cup at a time, using a hand mixer to fully incorporate. Mix for 2–3 minutes until thick and cohesive.
  • Let the batter rest for 5–10 minutes while you preheat your waffle iron.
  • Grease the waffle iron. Spoon batter onto the hot surface, spreading to ensure full coverage with no gaps.
  • Cook until golden brown and crisp. Thinner waffle irons work best, but thicker waffles are great too (just allow more cook time).
  • Assemble the sandwich: layer one waffle with warm turkey, spoon on hot gravy, and finish with a generous dollop of cranberry sauce. Top with a second waffle to complete the sandwich.
  • Serve immediately. Repeat for remaining sandwiches.

Notes

For extra-crispy waffles, let them cool slightly on a wire rack before assembling. Leftover stuffing works great here — just warm it slightly before mixing. This recipe is also fantastic with chicken, and makes a brilliant post-holiday brunch option. Serve with extra gravy on the side for dipping!

Tips for the win

  • Batter too loose… fold in a little extra stuffing until it holds a mound.
  • For ultra crisp edges… cook a touch longer and hold finished waffles on a rack in a 200 °F oven.
  • Sliders for a crowd… make mini waffles and set out a build-your-own station.
  • No turkey on hand… rotisserie chicken works beautifully.

Make ahead and storage

Cook waffles earlier in the day… cool… then re-crisp on a rack at 400 °F for a few minutes. Gravy and cranberry can be warmed on the stovetop just before serving. Leftover waffles freeze well… toast straight from frozen.
